Flying Goat Cellars is the original sparkling wine producer in Santa Barbara County. In 2005, winemaker Norm Yost launched the production of a sparkling wine program under the Goat Bubbles brand using the méthode champenoise technique.
Flying Goat Cellars is handcrafting sparkling wine at its own facility in Lompoc, CA, where every step of the process is done in-house. The winery now produces five distinct sparkling wines, Crémant, Blanc de Blancs, Blanc de Noirs, Brut Cuvée and Rosé. All of the wines are limited production, single vineyard and low dosage of less than 7 g/L
